Holyrood Distillery`s series of new-make spirits take inspiration from the rich brewing and distilling heritage of Edinburgh. This first release focuses on the yeast selection – fermenting Distiller`s Malt for 111.5 hours, with a combination of M-strain distiller`s yeast and US05 brewer?s yeast. The resulting whisky offers rounded malt notes, with hints of fresh pears and honeydew melon.
