Here’s the second batch from W.D. O’Connell’s Bill Phil range (named after the O’Connell family nickname from back in the day, coming from William Philip O?Connell, a blacksmith known for making great tools for footing turf). It’s a single malt Irish whiskey, which was made with peated malt that has been triple-distilled – not a common sight in the slightest! Made at the Great Northern Distillery in Dundalk, it’s a light, fruity with, with intriguing wafts of smoke coming through too.
